Review
"This excellent volume proves that no matter how well-trodden the Italian cookbook path is, an expert with genuine curiosity and a well-developed voice can still find new material." - Publishers Weekly“Every time I think I’ve seen it all, Katie Parla schools me and opens up an entirely new chapter of mind-blowing simplicity that I become obsessed with. This book proves to be no different. As I delve into these salacious recipes, I can only imagine where she will take me next!” —Marc Vetri, chef-founder Vetri Cucina“What do you want? A beautifully well-documented book that feels like visiting the soul of Italy, with pictures so good you can practically taste the authentic recipes? It’s right here, friends. Transport yourself.” —Joe Beddia, chef-owner Pizzeria Beddia“Katie Parla is without peer when it comes to cataloguing, eating, writing, and cooking about the foods of Italy. I’m biased. She’s my friend and colleague, and for years she has shown me the Italy of my dreams, in her books and just hopping in the car and taking off on the autostrada. As Katie says, ‘this is a calling,’ a duty for her to make sure these little culinary corners of her beloved Italy are revealed to us. But it’s her passion, her gorgeously fun writing style, and these amazing recipes from the Italian South that become our gifts to receive. Intelligent and thorough, I sat salivating while paging through this book, longing to be back in the convertible, driving the Amalfi Coast in search of that next great meal. Food of the Italian South will win awards, become an instant classic, and thrill the critics, no doubt about it. The real gift is that we get to see this part of Italy through Katie’s eye for detail, her luminous stories, and these amazing recipes.” —Andrew Zimmern “I first met Katie Parla in Rome. I was a fan of Tasting Rome and was thrilled to be spending time with her there. It was then she told me about her upcoming book, Food of the Italian South. Katie has successfully gained my attention for her rich and transportive knowledge of not only Rome but now the southernmost parts of Italy. This book will take you to a place in Italy you may not want to leave and will open your eyes to the food and culture of the Italian South.” —Melissa Rodriguez, executive chef Del Posto “Katie has unlocked the deliciousness of Italy’s South. This book brings the cuisine of lesser-known regions in an incredibly diverse culinary country to your home. She provides entertaining insight to her personal heritage while honoring the area’s culture and traditions. I can’t wait to get in the kitchen and start cooking this book!” —Sarah Grueneberg, chef-partner Monteverde Restaurant & Pastificio “Food of the Italian South is a rich, personal, and irresistible collection of undiscovered recipes and stories of regional cooking passed down from generation to generation.” —Evan Funke, chef-owner Felix “Katie Parla, or how I refer to her, ‘my Italian Goddess from Jersey,’ has taught me so much about food, life, friendship, and the importance of Danzig over the last few years. She has single-handedly and lovingly organized all of my culinary trips to Italy and Sicily, including our last trip to Puglia, the mysterious southern heel. I have personally woven a custom Koozie for this incredible book, which I carry close to my heart as a guide for the Italian South.” —Eric Wareheim

What a nice thing to finally see, a book that might preserve many recipes of the south that may disappear someday. Having travelled extensively in Campagna and Calabria I was a bit disappointed to see many recipes missing from this book that attempts to cover regions far too grande to give adequate attention to all of the fabulous recipes that are so very unique to these regions. I was excited to get it but disappointed to miss so many dishes I had sampled at the homes of family and friends. Overall a very nice book with lots of photos but barely scratching the surface of the exciting foods of the south.
I loved Katie Parla's first book Tasting Rome and was so excited to receive Foods of the Italian South. So excited, apparently, that I accidentally ordered it on two separate occasions and, to my surprise, received two on release day. The more the merrier! Each page is a perfect blend of history, culture and cuisine. Katie highlights recipes born out of necessity and the south's desire to make the most of any ingredient, while always educating the reader on the impact Italy's history has had on food. It will surely inspire you to visit southern Italy, and definitely to taste the foods from the region. I can't wait to cook my way through it, likely starting with the robust pasta section. :D
Another absolutely beautiful and thoughtful book by Katie Parla. We absolutely loved her first book, Tasting Rome, and found her recipes to be really accessible and easy to follow. Same here with Food of the Italian South. We can't wait to get cooking! We love how Katie weaves in tales of her own family's history and journey - stories so many of us with similar roots can relate to - throughout the book. The book is well researched - no doubt from her laborious travels through the region. The book is both cookbook and a guidebook to overlooked places. She honors the people she has met along her travels with such beautiful stories and photos...I found myself laughing and smiling and crying. If you love food, history, travel and discovering new and old tastes, you will love this book. Brava!
After much anticipation, Taste of the Italian South arrived yesterday. Having traveled the region and spending time in Basilicata, I couldn’t wait to have a book that unwrapped the culinary wonders of the region. It did not disappoint. I spent much of the evening reading through the stories and recipes and have started to craft my cooking plan. The book is organized well and the recipes highlight the region in a wonderful and thoughtful way. Items like a simple Frittata al Fiori are sure to land on a mother’s day brunch while Cicatielli con Pulieio will add a refreshing yet spicy pasta to my mid day meal. If you are a fan of Italian cooking and have not explored this region, Katie Parla’s book is an excellent place to start the journey.
Simply adore this book! Katie brings the Italian South to life through her stories and recipes - have read it cover to cover and can't wait to cook from all those dog-eared pages. So wonderful to see this mostly overlooked area of Italy come alive in these pages. And she even has a recipe for the illusive Liquirizia for which I have been searching since spending a week in Calabria - long summer nights spent overlooking the sea sipping this amazing digestivo for hours after dinner. Grazie for bringing back that wonderful memory!
Katie combines superior research with an unmatched natural understanding of people, food, and the culture they craft for themselves. Tasting Rome was an instant crowd pleaser and this is a perfect addition the collection. Beautifully art directed, elegantly and approachably written, and filled cover to cover with mouthwatering food inspiration.
I have many cookbooks at home and find this to be the best I have seen, the insight into the regions and people is great to read and the recipes are easy to follow, if you own any cookbooks, this must be part of your library
Another great book from Katie Parla ..... Not only is Katie an expert on Italian cuisine or on Italian history or as an author .... She is all of that .... When it come to Italy, Katie is an institution .... Book number five .... Can’t wait to dig in ....
